Ready to start cooking? You can start with one (or both) of these great Carrot Cake recipes that would be perfect for a birthday cake. The first one is very easy. The second recipe may take a bit more work, but it's worth it. We also have two different types of frostings to choose from. YUM!

Easiest Carrot Cake Ever
* 1 cup mayonaise
* 1 package yellow cake mix
* 4 eggs
* 2 1/2 teaspoons cinnamon
* 2 cups finely grated carrots
Pick from the following to make your carrot cake special. Add one, two or all four!
* 1 cup raisins
* 1/2 cup walnuts or pecans
* 2/3 cup shredded coconut (sweetened or unsweetened)
* 1 8 ounce can crushed pineapple, drained (leave out the water if you use this)
Directions:
1. Beat mayonaise, cake mix, eggs, cinnamon and 1/4 cup water in a bowl.
2. Stir in carrots. Add any of the extra ingredients listed above at this time.
3. Pour mixture into greased 13"x9" pan.
4. Bake for 30-35 minutes at 350 degrees, or until center of cake sprngs back or knife comes out clean from center of cake.
5. Cool and then frost the top.

Healthy Carrot Cake
* 2 cups whole-wheat flour
* 1 teaspoon baking powder
* 2 teaspoons baking soda
* 2 teaspoons ground cinnamon
* 1 teaspoon salt
* 1 cup wheat germ
* 1 1/4 cups sugar
* 1 cup vegetable oil
* 3 eggs
* 1 teaspoon vanilla extract
* 2 cups shredded carrots
* 1 cup chopped walnuts
* 1 cup flaked coconut
* 1 8 ounce can crushed pineapple, drained
Directions:
1. Preheat oven to 350 degrees.
2. Grease and flour a 13"x9"p an.
3. Mix together the flour, baking powder, baking soda, cinnamon and salt.
4. Stir in the wheat germ, sugar, oil, eggs and vanilla.
5. Mix well, then stir in shredded carrots, chopped nuts, coconut and pineapple.
6. Pour into a 13"x9" pan. Bake in preheated oven for 45 minutes, or until the center springs back when lightly tapped.

Frosting Recipes
Cream Cheese Frosting
* 4 ounces of cream cheese
* 1/4 cup butter
* 1 teaspoon vanilla
* 2 cups confectioners' sugar
Beat cream cheese, butter and vanilla together. Add sugar gradually, and beat until fluffy. Spread onto cake.
Pineapple Frosting
* 1/2 stick butter
* 2 tablespoons of pineapple juice from crushed pineapple
* 2 cups confectioners' sugar (or enough to make the icing the right consistency
Blend ingredients well. Frost carrot cake when cool.
